What to do When a Chocolate Craving Hits Hard

During one particular snowstorm, when I not feeling the urge to eat an icy cold protein smoothie I played around in my kitchen while sipping coffee. I came up with this velvety chocolate mug cake.

Hot food in cold weather, and cold food in hot weather makes sense, duh!

Chocolate always calls to me when I get the urge to bake. An old standby recipe for a one-minute chocolate mug cake came to mind. For a while, I was on a kick one winter where I ate one every afternoon. That recipe, unfortunately (or fortunately for this post) was long forgotten. After a bit of experimentation, I came up with this decadent “One-Minute Chocolate Cake”

This cake tastes indulgent, yet it fits into a consistent nutrition lifestyle. It may even satisfy that old familiar chocolate/sweet craving. Move over oatmeal and eggs, chocolate mug cake is here for breakfast.

Bonus: Take this to work! The dry ingredients can be mixed ahead.  At break time, add the kiss and liquid, cook in the microwave.

Note: For vegans, omit Half &Half and increase water to 1/2 cup.

Ingredients:

  •   1    scoop   vegan protein powder* (whey turns nasty  in the microwave)
  • 1    Tbsp.    each cocoa powder (Not dutch processed!), almond flour, flax seed, and half&half cream
  • 1/4  tsp      baking powder
  • 1    tsp.      powdered pure stevia
  • 1                 chocolate kiss
  • 1/3 cup      water

Directions:

  1.  Spray a coffee mug with non-stick spray and set aside.
  2. Mix the remaining ingredients and put in a mug.
  3. Cook in Microwave for 1 minute.
  4. Grab a spoon and eat.
